About the Role:
This stylish hotel seeks an enthusiastic Chef de Partie to join their talented kitchen brigade. You’ll be integral in leading a section, creating exquisite dishes, and working to the highest standards, while sharing your passion for cooking and developing your team.
Key Responsibilities:
- Plan and oversee day-to-day section running to meet service requirements.
- Follow all health and hygiene standards.
- Supervise and lead a team of Commis and Demi Chefs.
- Sample, smell, and observe food to ensure recipe and standard conformance.
- Take orders from the Sous Chef, assign tasks to Commis and Demi Chefs, and verify accurate execution.
- Write daily wine, dry storage, food requisitions, and kitchen transfers for Sous Chef approval to achieve high stock rotation.
- Maintain a clean and efficient kitchen section, maximizing food utilization.
- Participate in food production: portion meats, fish, vegetables, desserts, and utilize food surpluses to control costs.
- Communicate with and assist back-of-the-house personnel for efficient food production.
- Conduct daily food line inspections to maintain quality.
Skills and Expertise:
- NVQ Levels 2 & 3 (preferred).
- Experience in Michelin star or AA Rosette establishments.
- Hotel or Restaurant background.
- Knowledge of cooking techniques and styles.
- Understanding of food, hygiene, and safety.
- COSHH knowledge.
- Good verbal and written English.
- Computer literacy.
- Right to work in the United Kingdom.
- Experienced in fresh produce.
- NVQ level 1 & 2 or equivalent, and hygiene certificate (preferred).
