About the Role:
This prestigious Derbyshire hotel seeks a highly motivated and enthusiastic Chef de Partie to join their talented kitchen brigade. As a key member of the team, you’ll lead a section, creating exquisite dishes to the highest standards, whilst fostering a strong team environment.
Key Responsibilities:
- Plan and oversee daily section operations to meet service requirements.
- Adhere to all health and hygiene standards.
- Supervise and mentor a team of commis and demi chefs.
- Ensure food quality and adherence to recipes through sampling and observation.
- Receive orders from the Sous Chef, assigning tasks to commis and demi chefs and verifying completion.
- Prepare daily requisitions for wine, dry storage and food items, to ensure optimal stock rotation.
- Maintain a clean and efficient kitchen section, maximizing food utilization.
- Participate in food production; portioning meats, fish, vegetables and desserts, and managing food surpluses to control costs.
- Communicate with and assist back-of-house personnel for efficient food production.
- Conduct daily inspections of the food line to maintain quality.
Skills and Expertise:
- NVQ Levels 2 & 3 (preferred).
- Experience in Michelin star or AA Rosette establishments.
- Proven track record in hotel or restaurant environments.
- Solid understanding of culinary techniques and styles.
- Comprehensive knowledge of food hygiene and safety.
- COSHH knowledge.
- Excellent verbal and written communication skills in English.
- Computer literacy.
- Right to work in the United Kingdom.
- Experience with fresh produce.
- NVQ level 1 & 2 or equivalent (preferred).
- Hygiene certificate (preferred).
