About the Role:
This elegant Lancashire hotel seeks a passionate Chef de Partie to join their talented brigade and lead a kitchen section. You’ll be responsible for creating high-quality dishes and overseeing the team’s performance, working to exacting standards.
Key Responsibilities:
- Plan and oversee day-to-day section operations to meet service demands.
- Adhere to all health and hygiene regulations.
- Supervise and mentor Commis and Demi Chefs.
- Assess food quality and ensure conformity to recipes and standards.
- Receive orders from the Sous Chef, delegate tasks, and ensure proper execution.
- Prepare daily requisitions for wine, dry storage, and food items.
- Maintain a clean and efficient kitchen section, maximizing food utilization.
- Participate in food production, portioning meats, fish, vegetables, and desserts, and managing food surplus.
- Collaborate with back-of-house personnel to optimize food production.
- Conduct daily food line inspections to maintain quality standards.
Skills and Expertise:
- NVQ levels 2 & 3 (preferred).
- Experience in Michelin-star or AA Rosette establishments.
- Proven experience in hotel or restaurant kitchens.
- Comprehensive knowledge of cooking techniques and styles.
- Strong understanding of food hygiene and safety.
- COSHH knowledge.
- Excellent verbal and written English.
- Computer literacy.
- Experience with fresh produce.
- NVQ level 1 and 2 or equivalent.
- Hygiene certificate.
- Right to work in the UK.
