About the Role:
This stylish hotel seeks a passionate and experienced Chef de Partie to join their talented kitchen team. You’ll lead a section of the kitchen, focusing on creating high-quality dishes and training commis and demi chefs. Your role is pivotal in maintaining kitchen efficiency and food quality standards.
Key Responsibilities:
- Plan and oversee the daily running of your section to meet service requirements.
- Adhere to all health and hygiene standards.
- Supervise and lead a team of Commis and Demi Chefs.
- Sample, smell, and observe food to ensure conformance to recipes and standards.
- Receive orders from the Sous Chef and assign tasks to Commis and Demi Chefs, ensuring their correct execution.
- Prepare daily requisitions for wine, dry storage, and food.
- Maintain a clean and efficient kitchen section, maximizing food utilization.
- Participate in food production, portioning meats, fish, vegetables, and desserts.
- Utilize food surpluses to control costs.
- Communicate with and assist back-of-house personnel.
- Conduct daily food line inspections to maintain quality.
Skills and Expertise:
- NVQ levels 2 & 3 (desirable).
- Experience in a Michelin star or AA Rosette establishment.
- Strong knowledge of cooking techniques and styles.
- Proven experience within a Hotel or Restaurant setting.
- Excellent understanding of food, hygiene, and safety.
- COSHH knowledge.
- Strong verbal and written English.
- Computer literacy.
- Experience with fresh produce.
- NVQ level 1 and 2 or equivalent.
- Current hygiene certificate.
- Right to work in the UK.
