About the Role:
This prestigious West Sussex hotel seeks a passionate and experienced Chef de Partie to join their talented kitchen team. You will lead a section, contributing to the creation of high-quality dishes and fostering a positive team environment.
Key Responsibilities:
- Plan and oversee the daily running of your section to meet service demands.
- Adhere to all food safety and hygiene regulations.
- Supervise and mentor commis and demi chefs.
- Ensure food preparation meets recipes and standards through tasting, smelling and observation.
- Receive orders from the Sous Chef, assigning and checking the tasks of commis and demi chefs.
- Prepare daily requisitions for wine, dry storage, and food supplies, obtaining approval from the Sous Chef.
- Maintain a clean and efficient kitchen section, optimizing food utilization.
- Participate in food production, portioning meats, fish, vegetables, and desserts, controlling food costs through surplus management.
- Communicate and collaborate with back-of-house staff to maintain smooth operations.
- Conduct daily food line inspections to maintain quality standards.
Skills and Expertise:
- NVQ levels 2 & 3 (preferred).
- Experience in a Michelin star or AA Rosette establishment.
- Proven experience in hotel or restaurant kitchens.
- Strong understanding of cooking techniques and styles.
- Thorough knowledge of food hygiene and safety procedures.
- COSHH knowledge.
- Excellent verbal and written communication skills in English.
- Proficiency in computer applications.
- Right to work in the United Kingdom.
- Experience with fresh produce (preferred).
- NVQ level 1 and 2, or equivalent (preferred).
- Hygiene certificate (preferred).
