About the Role:
Holroyd Howe, a leading UK contract caterer, seeks a skilled Sous Chef to join their team in Guildford. The Sous Chef will assist the Head Chef in managing the kitchen, ensuring high standards of food quality and operational efficiency.
Key Responsibilities:
- Assist Head Chef in overseeing daily kitchen operations and staff management
- Prepare and cook dishes according to established recipes and standards, ensuring consistent quality and presentation
- Collaborate with Head Chef to develop innovative menu items and seasonal specials
- Manage and organize designated station, ensuring cleanliness and adherence to food safety standards
- Train, mentor, and supervise junior kitchen staff to support their professional development
- Maintain inventory levels and assist with ordering supplies
- Ensure compliance with all health and safety regulations
- Participate in quality control measures, including taste-testing and presentation checks
- Assist in managing kitchen budgets and controlling food costs
- Step in for Head Chef in their absence, assuming full responsibility for kitchen operations
- Write menus for the school and nursery
- Order stock for the menus
- Teach an apprentice
- Perform mandatory weekend shifts
- Setup late functions
Skills and Expertise:
- Proven experience as a Sous Chef with at least 5 years’ experience
- Culinary degree or equivalent qualification
- Comprehensive knowledge of various cooking techniques and international cuisines
- Strong understanding of food safety, sanitation practices, and regulations
- Ability to work efficiently in a fast-paced environment
- Excellent attention to detail and strong organizational skills
- Superior communication and teamwork abilities
- Proven leadership skills with experience in training and mentoring junior staff
- Creativity in menu development and innovative plating techniques
- Proficiency in kitchen management software and inventory control systems
- Flexibility to work evenings, weekends, and holidays
- Passion for culinary excellence and commitment to continuous learning
Job Facilities/Benefits:
- Full-time position (40 hours per week)
- Salary: 14.37/hour
- 230 days of work covering term time and year-round nursery
- Working hours: 8:00am – 16:00 Monday to Friday
- Occasional weekend work (mandatory)
