First Contact Chefs
About the Role:
This prestigious hotel seeks a passionate and skilled Chef de Partie to join their highly talented kitchen brigade. This role will involve leading a section of the kitchen and producing high-quality dishes to exacting standards. You’ll also play a key role in training and developing junior chefs.
Key Responsibilities:
- Plan and oversee the day-to-day running of your section to meet service requirements.
- Adhere to all health and hygiene standards.
- Supervise and lead a team of Commis and Demi Chefs.
- Sample, smell, and observe food to ensure conformance to recipes and standards.
- Take orders from the Sous Chef and manage Commis and Demi Chefs to ensure tasks are executed correctly.
- Prepare and submit daily wine, dry storage, food requisitions, and kitchen transfers for Sous Chef approval.
- Maintain a clean, efficient, and food-safe kitchen section, maximizing food utilization.
- Participate in food production, portioning meats, fish, vegetables, and desserts.
- Utilize food surpluses to control food costs.
- Communicate with and assist back-of-the-house personnel for efficient food production.
- Conduct daily food line inspections to maintain quality.
Skills and Expertise:
- NVQ levels 2 & 3 (preferred).
- Experience in Michelin-star or AA Rosette establishments.
- Strong knowledge of cooking techniques and styles.
- Understanding of food hygiene and safety.
- COSHH knowledge.
- Excellent verbal and written English.
- Computer literacy.
- Experience with fresh produce.
- NVQ level 1 and 2 or equivalent.
- Hygiene certificate.
