About the Role:
This stylish hotel seeks a passionate and experienced Chef de Partie to join their highly-talented kitchen brigade in Greater London. This integral role focuses on leading a section, creating exceptional dishes, and fostering team development within a high-standard kitchen environment.
Key Responsibilities:
- Plan and oversee the daily running of your section to meet service requirements.
- Adhere to all health and hygiene standards.
- Supervise and mentor a team of Commis and Demi Chefs.
- Sample, smell, and observe food to ensure conformance to recipes and standards.
- Receive orders from the Sous Chef and manage tasks for Commis and Demi Chefs, ensuring quality execution.
- Prepare daily wine, dry storage, food requisitions, and kitchen transfers for Sous Chef approval, aiming for optimal stock rotation.
- Maintain a clean and efficient kitchen section, maximizing food utilization.
- Participate in food production, portioning meats, fish, vegetables, and desserts, managing food surpluses to control costs.
- Communicate and collaborate with back-of-the-house personnel to maintain smooth food production.
- Conduct daily food line inspections to ensure consistent quality.
Skills and Expertise:
- NVQ levels 2 & 3 (preferred).
- Experience in a Michelin star or AA Rosette establishment (preferred).
- Proven background in a hotel or restaurant kitchen.
- Strong knowledge of cooking techniques and styles.
- Thorough understanding of food hygiene and safety procedures.
- COSHH knowledge.
- Excellent verbal and written communication skills (English).
- Computer literacy.
- Right to work in the UK.
- Experience with fresh produce (preferred).
- NVQ level 1 and 2, or equivalent (preferred).
- Hygiene certificate (preferred).
