First Contact Chefs
About the Role:
This stylish London hotel seeks a passionate and experienced Chef de Partie to join their talented kitchen team and lead a section, producing high-quality dishes to exacting standards. You’ll also play a key role in training and mentoring junior chefs.
Key Responsibilities:
- Plan and manage the daily operations of your section, meeting service requirements.
- Ensure adherence to all health and hygiene standards.
- Supervise and mentor commis and demi chefs.
- Conduct quality checks on food, ensuring it meets recipes and standards.
- Receive orders from the Sous Chef and oversee their execution by commis and demi chefs.
- Prepare daily requisitions for wine, dry storage, and food supplies.
- Maintain a clean, efficient, and well-organized kitchen section.
- Maximize food utilization and control costs.
- Prepare portions of meats, fish, vegetables, and desserts.
- Collaborate with back-of-house staff to maintain efficient food production.
- Conduct daily inspections to maintain food quality.
Skills and Expertise:
- NVQ Level 2 & 3 (desirable).
- Experience in Michelin-starred or AA Rosette establishments.
- Strong knowledge of cooking techniques and styles.
- Good understanding of food hygiene and safety.
- COSHH knowledge.
- Excellent verbal and written English skills.
- Computer literacy.
- Proven experience working in a professional kitchen environment.
- Strong leadership and mentoring skills.
- Excellent communication skills.
- Experience with fresh produce.
- NVQ Level 1 & 2 or equivalent.
- Hygiene certificate.
