About the Role:
This stylish London hotel seeks an enthusiastic Chef de Partie to join their talented kitchen team. This integral role leads a section, creating high-quality dishes and ensuring adherence to standards.
Key Responsibilities:
- Plan and oversee daily section operations to meet service demands.
- Adhere to all health and hygiene standards.
- Supervise and lead a team of commis and demi chefs.
- Sample, evaluate, and ensure food conforms to recipes and standards.
- Receive orders from the Sous Chef, manage commis and demi chef tasks, and verify completion.
- Prepare daily requisitions for wine, dry storage, and food items, seeking Sous Chef approval for stock rotation.
- Maintain a clean and efficient kitchen section, maximizing food utilization.
- Participate in food production, portioning meats, fish, vegetables, and desserts, and controlling food costs.
- Communicate with back-of-the-house staff to maintain efficient food production.
- Conduct daily food line inspections to maintain quality.
Skills and Expertise:
- NVQ levels 2 & 3 (preferred).
- Experience in Michelin-star or AA Rosette establishments.
- Hotel or restaurant background.
- Strong knowledge of cooking techniques and styles.
- Excellent understanding of food hygiene and safety.
- COSHH knowledge.
- Proficient in verbal and written English.
- Computer literacy.
- Right to work in the United Kingdom.
- Proven experience in fresh produce.
- NVQ level 1 and 2 or equivalent, and hygiene certificate (preferred).
