About the Role:

This elegant hotel seeks a passionate and skilled Chef de Partie to join their highly talented kitchen brigade. You’ll play a key role in leading a section, creating exquisite dishes, and upholding the highest standards.

Key Responsibilities:

  • Plan and oversee the day-to-day running of your section, meeting service requirements.
  • Adhere to all health and hygiene standards.
  • Supervise and lead a team of commis and demi chefs.
  • Sample, smell, and observe food to ensure conformance to recipes and standards.
  • Take orders from the Sous Chef, assign tasks to commis and demi chefs, and verify proper execution.
  • Prepare daily wine, dry storage, food requisitions, and kitchen transfers, seeking Sous Chef approval to maximize stock rotation.
  • Maintain a clean and efficient kitchen section, maximizing food utilization.
  • Participate in food production, portioning meats, fish, vegetables, and desserts, and utilize food surpluses to control costs.
  • Communicate and assist back-of-the-house personnel to maintain efficient food production.
  • Conduct daily food line inspections to ensure quality maintenance.

Skills and Expertise:

  • NVQ Levels 2 & 3 (preferred).
  • Experience in Michelin-starred or AA Rosette establishments.
  • Hotel or restaurant background.
  • Strong knowledge of cooking techniques and styles.
  • Good understanding of food hygiene and safety.
  • COSHH knowledge.
  • Excellent verbal and written English.
  • Computer literacy.
  • Experience with fresh produce (desired).
  • NVQ level 1 & 2 or equivalent (preferred).
  • Hygiene certificate (preferred).
