About the Role:

This prestigious West Sussex hotel seeks a passionate and experienced Chef de Partie to join their talented kitchen team. You will lead a section, contributing to the creation of high-quality dishes and fostering a positive team environment.

Key Responsibilities:

  • Plan and oversee the daily running of your section to meet service demands.
  • Adhere to all food safety and hygiene regulations.
  • Supervise and mentor commis and demi chefs.
  • Ensure food preparation meets recipes and standards through tasting, smelling and observation.
  • Receive orders from the Sous Chef, assigning and checking the tasks of commis and demi chefs.
  • Prepare daily requisitions for wine, dry storage, and food supplies, obtaining approval from the Sous Chef.
  • Maintain a clean and efficient kitchen section, optimizing food utilization.
  • Participate in food production, portioning meats, fish, vegetables, and desserts, controlling food costs through surplus management.
  • Communicate and collaborate with back-of-house staff to maintain smooth operations.
  • Conduct daily food line inspections to maintain quality standards.

Skills and Expertise:

  • NVQ levels 2 & 3 (preferred).
  • Experience in a Michelin star or AA Rosette establishment.
  • Proven experience in hotel or restaurant kitchens.
  • Strong understanding of cooking techniques and styles.
  • Thorough knowledge of food hygiene and safety procedures.
  • COSHH knowledge.
  • Excellent verbal and written communication skills in English.
  • Proficiency in computer applications.
  • Right to work in the United Kingdom.
  • Experience with fresh produce (preferred).
  • NVQ level 1 and 2, or equivalent (preferred).
  • Hygiene certificate (preferred).
