About the Role:
This prestigious Wiltshire hotel seeks a passionate and skilled Chef de Partie to join their talented kitchen brigade. You will lead a section, creating high-quality dishes and contributing to the team’s success.
Key Responsibilities:
- Plan and oversee daily section operations to meet service demands.
- Adhere to all health and hygiene standards.
- Supervise and guide Commis and Demi Chefs.
- Ensure food quality and consistency by sampling, smelling, and observing dishes.
- Receive orders, assign tasks, and monitor their execution.
- Prepare requisitions for wine, dry storage, and food items.
- Maintain a clean and efficient kitchen section maximizing food utilization.
- Participate in food production including portioning meats, fish, vegetables, and desserts.
- Control food costs by utilizing food surpluses.
- Communicate and coordinate with back-of-the-house personnel.
- Conduct daily food line inspections to maintain quality.
Skills and Expertise:
- NVQ Level 2 & 3 (or equivalent) preferred.
- Experience in Michelin-star or AA Rosette establishments.
- Proven background in hotel or restaurant kitchens.
- Strong knowledge of cooking techniques and styles.
- Understanding of food hygiene and safety regulations.
- COSHH knowledge.
- Excellent verbal and written English.
- Computer literacy.
- Proven ability to work with fresh produce.
- NVQ Level 1 & 2 (or equivalent) and hygiene certificate.
