About the Role:

Wagamama is seeking a highly motivated Technical Manager for a 6-month fixed-term contract to oversee food safety, quality, and sustainability across our London restaurants. You will play a critical role in ensuring the highest standards of food safety and compliance are maintained.

Key Responsibilities:

  • Manage supply chain food safety, quality, and integrity.
  • Ensure allergen and nutritional compliance.
  • Conduct supplier performance management, including audits and reviews.
  • Complete, review, and trend technical scorecards.
  • Support new menu launches and manage sample requests for lab testing.
  • Assess product specifications and raw materials to ensure accuracy.
  • Promote and represent technical integrity.
  • Ensure legal and ethical food safety responsibilities are met.
  • Resolve or escalate food safety issues and complaints.
  • Provide accurate advice to other teams on food safety, allergen compliance, and nutrition.
  • Generate accurate compliance reports to drive business improvement.
  • Maintain the menu launch technical process.
  • Prepare and review allergen and nutritional guides.
  • Maintain up-to-date ingredient specifications, supplier information, and allergen/nutritional information.
  • Support driving sustainability, welfare, and ethical trading.
  • Maintain supplier supply chain traceability for meat, fish, and produce.

Skills and Expertise:

  • Degree in Food Science, Nutrition, or related field.
  • Minimum 5 years of experience in technical management.
  • Expertise in supplier management, raw material management, and risk assessments.
  • HACCP Level 3 certification.
  • Knowledge of TACC/VACCP.
  • Understanding of GFSI accreditation standards.
  • Strong knowledge of allergen management and nutritional regulations.
  • Understanding of industry sustainability and welfare standards.
  • Experience working with horizon scanning, FINN, and RASFF.
  • Knowledge of restaurant operations (beneficial).
  • Excellent communication and interpersonal skills.
  • Strong IT skills (Excel, databases).
  • Attention to detail.
  • Ability to travel.
  • Strong organizational, planning, and prioritization skills.
  • Team player and self-motivated.
  • Passion for food.
